I would like to be able to hook up the Microsquirt to do logging only first.
CLT + IAT + LC-1 + RPMs + MAP

Will I be able to use it this way?
Without wiring up the injectors, I'm still running a carb

Yes, that will work. It will let you see the current engine operating parameters, and also verify the input sensors work as expected.
