Yes, you can set the entire spark advance table to zeros, but still use a knock sensor.
If your distributor has no vacuum advance, you could also add that in the spark advance table (increasing advance at lower kPa) while letting the distributor handle the mechanical (rpm dependent) advance. The downside is that you would not know the exact advance except with a timing light (but which is no worse than what you have now, really...)
