Don't know if you could do it without rewriting some code on the MS, but if you had a way to mount a fast idle solenoid or dashpot-type solenoid, you could do it with the flick of a switch.
I personally use a bicycle shifter mounted to my transmission shifer (right below the knob) as a hand throttle ...

That custom.ini is in the /mtcfg directory in your particular project folder (car1 or whatever you call yours). Mine was set at a default xLimits=1500,5000 which I changed to 1200, 4500 and yLimits to 20, 100 (I'm not boosted).

I use plumber's silicone grease (called heat-proof or faucet grease) for all my o-ring needs. Handy little flip-top canister, too.

The main problem I had with a too-big throttle body (mine is a TBI setup) is that tip-in was hinkey. Alot of vacuum resistance against the throttle plates when pressing the gas pedal from idle caused a low RPM bog.
